6.Dry fruits – almonds, pistachios, raisins, cashews (all chopped) – ½ cup
7.Cardamom powder – 1 tsp
8.Saffron – a pinch
9.Rose water – 1 tsp (optional)

Instructions:


1.In a heavy-bottomed pan or kadhai, heat ghee over medium heat. Once the ghee is hot, add vermicelli and sauté it until it turns golden brown. Make sure you keep stirring the vermicelli to prevent it from burning. This should take about 5-7 minutes.

2.Once the vermicelli is golden brown, remove it from the pan and keep it aside.

3.In the same pan, add milk and bring it to a boil. Once it comes to a boil, lower the heat and let the milk simmer for 10-15 minutes. Stir the milk occasionally to prevent it from sticking to the bottom of the pan.

4.After 10-15 minutes, add the sugar and khoya to the milk and stir well until the sugar dissolves completely. Let the milk simmer for another 10-15 minutes.

5.Add the roasted vermicelli to the milk and stir well. Let the vermicelli cook in the milk for about 5-7 minutes until it becomes soft.

6.Add the chopped dry fruits, cardamom powder, and saffron to the milk and stir well.

7.Let the Sheer Khurma cook on low heat for another 5-7 minutes until it reaches the desired consistency. If the Sheer Khurma is too thick, you can add a little more milk to it.

8.Finally, add the rose water and mix well.

9.Turn off the heat and let the Sheer Khurma cool down for a few minutes.

10.Serve the Sheer Khurma in bowls or glasses and garnish with more chopped dry fruits.

1.You can adjust the sweetness of the Sheer Khurma according to your taste by adding more or less sugar.

2.If you don't have khoya, you can substitute it with condensed milk.

3.You can add more or less dry fruits depending on your preference.
