Instructions

4.Add the onion, peppers, garlic  and tomato to the pan and cook until the vegetables are soft and the onion is translucent  about 10 minutes.

7.Add the chicken or vegetable broth to the pan and stir until combined.

8.Arrange the snails, if using  on top of the rice.

9.Bring the mixture to a boil  then reduce the heat to low and let it simmer for about 20 minutes  or until the rice is tender and the liquid has been absorbed.

10.Transfer the pan to the oven and bake for an additional 5 10 minutes  or until the top of the rice is crispy and golden brown.

11.Serve hot, family style  with lemon wedges on the side.
